WHY LAKE CITY? A PERFECT LOCATION FOR A CRAFT BREWERY

Halpatter Brewing Co. began in 2013 when Chris Candler and Jeremy Gable dreamed of turning their homebrewing hobby into something bigger. Two years later, Chris met fellow brewer Jonny Frazier, and the three bonded over their shared passion. Combining Chris’ business expertise, Jonny’s engineering skills, and Jeremy’s graphic design talents, they formed a dynamic team. Together, they decided to take their homebrewing to the next level, and the idea for a full-scale brewery was born.

When it came time to decide on a location for their brewery, Lake City was the clear choice. Positioned along the key corridors of I-75 and I-10, Lake City attracts an endless stream of travelers and tourists, making it an ideal hub for businesses catering to both locals and visitors.

But beyond its strategic location, Lake City had something else—an untapped craft beer market. With no local breweries within a 50-mile radius, there was a huge opportunity to fill the gap for beer lovers in the area. The founders saw the potential to not only create a thriving business but also to become part of the city’s downtown revitalization efforts. As Lake City works to rejuvenate its historic core, Halpatter Brewing has established itself as a leader in the community, offering a gathering place that brings people together and adds new life to the area.

A NOD TO LOCAL HISTORY: THE INSPIRATION BEHIND THE NAME

At Halpatter Brewing Co., a deep respect for local heritage runs through everything they do. The name “Halpatter” comes from Halpatter Tustenuggee, or Alligator Warrior, a Seminole chief who once resided in Alligator Village, the area now known as Lake City. By choosing this name, the brewery proudly honors the cultural roots of the Suwannee Valley, paying tribute to its history before the town was renamed in 1859.

FLAGSHIP BEERS: CELEBRATING LAKE CITY’S HERITAGE

Apart from its name, Halpatter Brewing Co.’s signature beers also pay tribute to the rich history and local landmarks in Lake City and the state of Florida. For example, Seymour & Finnegan’s Red Irish Ale honors the Battle of Olustee, the only major Civil War battle fought in Florida. Meanwhile, the O’Leno Cream Ale celebrates O’Leno State Park and its connection to the Civilian Conservation Corps, a key piece of Depression-era history.

Big Hal American Brown Ale further celebrates Halpatter Tustenuggee, the brewery’s namesake and a Seminole chief. And finally, Old School Session IPA nods to Lake City’s historical connection as the original home of the University of Florida. Leave No Trace: Tips For Responsible Tourism In Lake City’s Natural Areas

Lake City–Florida’s Springlands is a one-of-a-kind haven for nature lovers, offering a wealth of natural attractions such as Ichetucknee Springs State Park, Big Shoals State Park, Osceola National Forest, Falling Creek Falls, Rum Island Spring and Park, and O’Leno State Park.

To ensure these beautiful places remain protected and accessible for future generations, it’s crucial for visitors to practice responsible tourism by adhering to the principles of “Leave No Trace.” Here’s how you can do your part:

PRINCIPLE #1: PLAN AHEAD AND PREPARE

Planning ahead is vital when visiting Lake City’s natural attractions. For example, check park websites for seasonal hours, trail maps, trail and road closures, and any alerts about wildlife or weather conditions.

For Ichetucknee Springs, reserve tubing or paddling online to secure a spot, especially during summer. Also, please remember that pets are not allowed on trails near swimming areas or in the water anywhere within the park.

If you plan to kayak or canoe at Big Shoals State Park, you’ll want to verify water levels by contacting the ranger station. Keep in mind that the park closes the canoe launch to visitors and campers when the water level exceeds 62 feet.

No matter where you go, you won’t want to forget essentials like insect repellent, sunscreen, and plenty of water. By preparing thoroughly, you can ensure a smooth, enjoyable, and eco-friendly adventure in Florida’s Springlands!

PRINCIPLE #2: TRAVEL & CAMP ON DURABLE SURFACES

When exploring the Lake City area, it’s essential to travel and camp on durable surfaces to protect the environment. Hikers should stick to established trails instead of creating their own pathways to prevent erosion and avoid disturbing the indigenous vegetation. For an eco-friendly experience at the springs, avoid vegetated areas and keep fins off the bottom to protect the diverse plant life and wildlife habitat.

While looking for a spot to set up your campsite at places like Ichetucknee Springs Campground or O’Leno State Park, make sure to choose bare ground or gravel. You should always camp at least 200 feet away from water sources to protect riparian areas and help maintain nearby wildlife’s access to water​.

PRINCIPLE #3: DISPOSE OF WASTE PROPERLY

You may have heard the famous phrase, “Take only memories, leave only footprints.” With this in mind, remember to dispose of waste properly when visiting sites like Osceola National Forest or Rum Island Spring.

To reduce plastic waste, we highly suggest bringing a reusable water bottle instead of a plastic one. Pack reusable bags, utensils, and containers for camping or picnicking to minimize single-use plastic consumption. Additionally, always inquire about recycling options at park entrances or visitor centers and recycle appropriately.

Most importantly, never litter! Ensure that everything you bring into the parks, including trash, leftover food, and litter, makes its way back out with you.

PRINCIPLE #4: LEAVE WHAT YOU FIND

Respect archaeological sites at Ichetucknee Springs, such as the remnants of a 17th-century Spanish mission, by not removing artifacts or disturbing these areas to maintain their historical integrity. Protect natural features in areas like Falling Creek Falls and O’Leno State Park by avoiding picking plants, removing rocks, or altering landscapes.

Whether you’re hiking through the serene trails of Osceola National Forest or swimming in the crystal-clear waters of Ichetucknee Springs, leave behind natural objects like feathers, shells, and flowers. This rule protects the ecosystem and ensures that future visitors can revel in the same breathtaking beauty that makes Lake City–and Columbia County as a whole–so special.

PRINCIPLE #5: MINIMIZE CAMPFIRE IMPACTS

To minimize campfire impacts, follow these specific tips for campsites like O’Leno State Park and Ichetucknee Springs Campground. To prevent uncontrolled fires, begin by always using established fire rings or designated fire areas.

Before lighting a fire in the campfire ring, double-check that there are no burn bans on the park’s website. Keep fires small and manageable, and remember that gathering firewood in Florida State Parks is prohibited. Instead, you’ll need to bring locally sourced firewood with you or purchase firewood at park ranger stations or campground stores.

When you’re done using your campfire, make sure it’s completely extinguished before leaving by pouring water and stirring the ashes. Additionally, consider using a camp stove for cooking to minimize your environmental impact​.

PRINCIPLE #6: RESPECT WILDLIFE

We know how exciting it is to spot some of our unique wildlife in their natural habitats, like beavers, otters, wild turkeys, and maybe even a manatee! However, it’s imperative to always maintain a safe distance from all animals and avoid approaching, frightening, or feeding them.

Feeding animals, even small ones, can be harmful as it teaches them to rely on humans for food and can disrupt their ability to survive in the wild. When birdwatching, bring binoculars or a camera with a zoom lens to observe wildlife up close without disturbing their natural behaviors.

PRINCIPLE #7: BE CONSIDERATE OF OTHERS

When exploring Florida’s Springlands, it’s essential to be considerate of other visitors so everyone can have an enjoyable experience. For example, keeping noise levels low helps maintain a peaceful environment while increasing your chances of spotting wildlife!

Use designated trails and launch sites to avoid congestion and always yield to other hikers and paddlers. Moreover, you’ll want to be mindful of personal space, especially in popular areas like Ichetucknee Springs during the summer.

By following the principles of “Leave No Trace,” you contribute to preserving Lake City’s pristine natural areas. Let’s all do our part to keep these environments beautiful and accessible for future generations to enjoy!

Xapa Coffee & Bakery: Made-From-Scratch Flavors In Lake City

Lake City–Florida’s Springlands is proud to be the home of several up-and-coming foodie establishments, with a focus on locally sourced flavors. One of these exciting businesses that captures the heart and soul of our charming downtown is XAPA Coffee & Bakery.

We sat down with owners Megan and JoyAnnett to learn more about XAPA, including its genesis, connection to the local community, and made-from-scratch (and delicious!) menu. Keep reading to deep dive into their journey, the soul of XAPA, and tips for running a successful small business!

OPENING XAPA

When envisioning their dream business, JoyAnnett and Megan, two best friends, knew they wanted to create a warm, welcoming, and friendly environment that would bring joy to every customer. Inspired by this vision, they chose the name “Xapa,” derived from the Greek word χαρά (chara), meaning “joy.”

Can you share a little about the background of XAPA Coffee & Bakery? What inspired you to start this business? 

XAPA Coffee & Bakery is the realization of two best friends’ lifelong dreams and passion. Between us, we have decades of experience in creating hand-crafted beverages and pastries, and we are now blessed enough to share our love with the world.

We wanted a place where people could have an experience with friends, family, professionals, and new relationships formed locally–whether sitting outside on the patio, inside on the cozy couch, or out front enjoying the historical views of our town. We also wanted them to enjoy beautifully crafted drinks made from scratch and in-house baked items sourced from as many local businesses as possible.”

How did you choose the location for XAPA Coffee & Bakery in Lake City?

“Fred from Fred’s Leather Shop, Megan’s father-in-law, purchased the location. Once we saw the property, we joked about how perfect it would be. Megan/Kyle and Micah/JoyAnnett chatted outside about the dream and agreed to make it a reality. For the next 2 ½ years, we all worked tirelessly (with the help of friends and family) on turning the dream into a reality.”

UNIQUE OFFERINGS

At XAPA, you can enjoy a new treat every time you visit with over 50 bakery options, all skillfully crafted by five talented bakers. “There are way more options than anticipated, but it’s what our customers have loved and come to expect,” JoyAnnett shares.

With so many options to choose from (including hand-crafted beverages, too!), we thought we’d ask the owners to fill us in on some of their personal favorites.

What are some of the most popular items on your menu? Do you have any personal favorites?

JoyAnnett: “All the flavors, syrups, and sauces are all crafted and made in-house. The current new flavor is pear brown sugar cinnamon and is a sauce. I had wanted to share this creation for seven months before launching. This summer, I’ve offered more flavor options than ever as customers beg me to keep their favorites. There are 17 unique house-made options to choose from. These flavors can be added to your latte, coffee, matcha, blended lattes, and a customer-favorite: cold foam.

My personal favorites are an iced triple shot rosemary vanilla latte in the morning and an iced raspberry matcha with raspberry cold foam in the afternoon. I’m also obsessed with the Jalapeño White Cheddar Bagels and Quiche.”

Megan: “The most popular bakery item is my signature macarons, which started my passion for baking along with the British Baking Show. Currently, my personal favorite is an iced triple shot pear brown sugar cinnamon latte with ricotta toast (made on my house-made sourdough and house-made ricotta created from local milk).”

At the heart of XAPA Coffee & Bakery lies a deep passion for family, community, and exceptional craftsmanship. We asked Megan and JoyAnnett to share their thoughts on what makes running XAPA so special and how their dedication to these values shapes their business.

 What do you love most about running XAPA Coffee & Bakery?

 “Being able to work with the ones we love the most: our family. Creating memories and moments with the community and sharing our passion.”

 Can you share a memorable story or moment that has happened at XAPA?

 “During the latest hurricane, when others were without power, Downtown Lake City had power, and we were able to open and serve emergency workers, linemen, and customers.”

Are there any cultural or family traditions that influence how you run XAPA?

 “We both agreed that family time is the most important, and we close on all major holidays, giving the staff and ourselves time with the ones we love.”

What advice would you give to someone looking to start their own coffee shop or bakery?

“It’s surprisingly a lot more work than you would expect! But if you love it and have a passion for it–and who you are working with–then it will be well worth the work required.”

How has XAPA Coffee & Bakery evolved since it first opened, and what are your future plans for the business?

“We would love to open a second location with a large commercial kitchen to offer even more options and serve wholesale to local businesses.”

CONNECTION TO LAKE CITY

 “I was immediately drawn to Lake City because of the small-town atmosphere and friendly residents,” Megan explains. This affection for the community is evident in XAPA Coffee & Bakery’s active involvement in local events and initiatives.

What is one thing you wish more people knew about Lake City?

“That the downtown area is worth a visit. It’s up-and-coming with the new shops, the Blanche, the brewery, and local events.”

How do you engage with the Lake City community? Are there any local events or initiatives that you participate in?

 “Most recently, we partnered and participated in the Florida Community College Foundation’s first annual point4 run to support college education and the growth of our youth. We had the absolute best time handing out java chiller, matcha, and refreshers to the runners, and we look forward to next year’s event!

We participated in the farm-to-table local event held downtown and are hosting a panting night fundraiser. Another event we are proud to bring to Lake City is the annual Latte Art Throwdown, first held on Nov 18th, 2023. We share the art and love of coffee while involving our community and inspiring our youth. We want to have more events that combine education with coffee and baking.”

Do you have any other favorite local businesses or eateries that you think visitors should check out?
